Spinach and Cottage Cheese Ravioli

Recently Baby Boo has learned to say “thank you” though it sounds more like ‘danke’. Or perhaps he is on his way to learn German. Anyway, to practice this German influenced thank you, he keeps bringing onion,potato, remote, books anything within his reach to us, so that we say thank you to him. This little game of his gets even more amusing in kitchen as he ll put(rather throw) all the onions on the counter, and we are suppose to say thank you for every single onion and he ll happily clap while saying danke. He will not call us as “ma and pa” rather he ll address as “anna” or simply call out “aaja aaja” pointing towards us.

Toddlers are weird, there is no set patterns for them. If you ever thought that you have figured out your baby’s need,likes, dislikes then pinch yourself BECAUSE you are dreaming. No one can, and can anyone? One day they like to with red spoon other day they ll hate it and will want blue. Or on days they ll use 3 spoons to feed themselves and it doesn’t stop on spoons. Clothes, socks, hat, toys, your clothes, your shoes almost everything. They have the final say.

Few months back baby boo hated spinach now all he want is spinach so much so that he can eat it raw if allowed. Perhaps he is getting inspired by the popeye poster in his room or whatever, I have stopped thinking and calculating every situation just like his dad am going with the flow.

Spinach Cottage Cheese Ravioli

INGREDIENTS

For dough

  • Whole wheat flour
  • Oil
  • Salt
  • Water

For filling

  • Spinach
  • Garlic
  • Cottage cheese (paneer)
  • Cheese
  • Salt
  • Black pepper powder

METHOD

  • Mix flour, salt and oil and knead into soft dough.
  • In a fry pan add oil add garlic and spinach. Cook till spinach is wilted.
  • Add cottage cheese to it. Season with salt and pepper. Stir for 2 3 minutes and keep aside.
  • Take small ball of dough and roll out into thin.
  • Using a cookie cutter , cut them into small circles.
  • Take one circle place a spoonful of filling add little shredded cheese on top and cover it with other rolled out circle. seal the edges by gently pressing them. Prepare rest of the ravioli similarly.

  • In a separate pan, put water for boiling. To this add butter and pinch of pepper for extra flavour. Once water start boiling put all ravioli in it.
  • It will take 3 to 4 minutes for them to cook.
  • Drain the water and serve ravioli as it is. Or you can pour white sauce over it and have a little treat for yourself.
